Yields 4 servings at 173 calories each.

This is one of my favorite recipes of 2019! The best meal prep is the kind that tastes just as good on the last day of the week as it did on the first and this one checks that box! Packed with flavor without all of the extra calories!


  • 1lb 98% ground chicken

  • 1 package baby Bella mushrooms

  • 1/3 cup matchstick carrots

  • 1 tsp minced garlic

  • 5 Tbsp low sodium soy sauce (to taste)

  • 1 packet lettuce wrap seasoning mix by sun bird (in Asian section of grocery store!)

If you want to save more points skip the seasoning packet (6sp) and use a mixture of garlic powder, onion powder, salt & pepper.)


  1. Cook chicken in skillet on medium heat until cooked completely

  2. Add soy sauce & 1/4 cup water and seasoning packet.

  3. Cook on medium high & stir until combined.

  4. Add garlic and mushrooms and cook until mushrooms are tender.

  5. Add carrots last and cook an additional minute or 2, stirring frequently.

  6. Serve over butter lettuce leaves, these are great with my cauliflower fried rice!
