Yields 4 servings at 144 calories.

This is one of the easiest meal preps I’ve made! It is so delicious even a few days later and is also a great low point main dinner dish! This chicken with a bruschetta inspired topping is a favorite of mine and I hope it becomes a favorite for you too!


  • 1 Package Chicken Tenders (raw)

  • Favorite seasoning (I like to use ranch powder or garlic powder & Italian seasoning!)

  • Salt & pepper to taste

  • Topping:

  • 2 Roma tomatoes

  • Handful fresh basil

  • 1 Tbsp minced garlic

  • Garlic and herb seasoning to taste


1. Season chicken tenders on a baking sheet lined with foil.

2. Bake at 25 for 20 to 25 minutes until chicken is fully cooked through.

3. While chicken is cooking dice the roma tomatoes (I like to take out the seeds first so it doesnt get runny), chop the basil and mix together in a bowl with the garlic and other seasonings.

4. Serve cold tomato mixture over the chicken tenders and enjoy!

*If meal prepping I suggest keeping the tomato mixture separate from the chicken so you can reheat the chicken alone. Add your favorite vegetable and/or a side salad!
