CREAMY TUSCAN CHICKEN

Yields 4 servings at 442 calories each

INGREDIENTS


  • 3 chicken breast

  • 2 jars light Alfredo sauce

  • 1/2 cup grated parmesan

  • 1/2 cup sun-dried tomatoes (not pocked in oil)

  • 2 cups fresh spinach

  • 2 tbsp Italian seasoning

  • Garlic powder, onion powder, salt and pepper to taste


DIRECTIONS


  1. Start by adding your Alfredo sauce, parmesan, tomatoes and seasoning to the crockpot and stir until well combined.

  2. Add in the chicken and spoon some sauce over the top of it.

  3. Cook on low for 2-4 hours until chicken is tender.

  4. Add in the spinach and cook your cauliflower rice while the spinach wilts down, this only takes a couple of minutes.


This was awesome with cauliflower rice but would be great with regular rice or pasta as well!

Mine made 4 huge servings!
