CROCK-POT MEATLOAF AND POTATOES

Yields 3 large portions at 223 calories for the meatloaf and 70 calories for 1/2 cup red potatoes.

INGREDIENTS

  • 1lb lean ground beef

  • 1/2 cup oats

  • 1 small can tomato sauce

  • 1 to 2 Tbsp soy sauce

  • Minced garlic to taste

  • 1 Tbsp each of garlic powder and onion powder

  • Salt and pepper to taste

  • 6-10 red potatoes + desired potato seasoning (I used salt, pepper and ranch seasoning!)


DIRECTIONS


  1. Make a foil divider inside your crockpot by making 2 foil boats with 1" sides and laying themside by side in the crock pot, create a middle divider if necessary (See video linked below for how I made mine!)

  2. Mix all ingredients (besides potatoes) together to form your meat loaf.

  3. Add into one side of your crock pot lined in foil, make sure to use cooking spray to avoid it sticking.

  4. Dice your potatoes into wedges, spray on olive oil and toss in seasoning, lay them on the other side of the crock pot.

  5. Cook on low for 4 to 5 hours until meatloaf is completely cooked through and potatoes are tender.
