Easiest Shepherds Pie


Shepherds pie with ground beef, mixed vegetables and mashed potatoes in a bowl.
Yields 4 large servings at 391 calories

This 5 ingredient dinner is probably one of my favorite dishes! It's simple comfort food for a fraction of the calories! With savory beef and mashed potatoes, this dish is sure to please even the pickiest eater! It also has a ton of vegetables and packs a big flavor punch! This budget friendly, 5 ingredient meal should be on your meal plan ASAP!


INGREDIENTS

  • 1lb Ground Beef (we use 97/3)

  • 1 packet instant mashed potatoes

  • 1 16oz bag frozen mixed vegetables (peas, carrots, corn, green beans)

  • 1 Beef Stew Seasoning packet

  • 1/2 to 3/4 can tomato sauce (15oz can)


DIRECTIONS

  1. Preheat oven to 375 degrees F

  2. Cook ground beef in a skillet with salt and pepper, once done drain out any excess fat and return it to the skillet.

  3. Start any preparations for the instant mashed potatoes (we buy the kind where you just have to boil water)

  4. With the skillet on medium heat, add in the beef stew packet, frozen vegetables and 1/2 can tomato sauce (Add more tomato sauce if you think it needs it, I added just about 1/2 a can)

  5. Stir frequently and let all ingredients combine together.

  6. Finish off your instant mashed potatoes, add milk if you need to make them thinner to spread over the top of the meat.

  7. In a greased baking dish add the meat and vegetable mixture then top with your mashed potatoes and spread them evenly over the entire dish

  8. Bake at 375 for 25 to 30 minutes or until warm and bubbly!

Yields 4 large servings at 391 calories

I cannot figure out the size but it’s smaller than the regular 9x13! I think it’s 7x11 but it was a tight squeeze!
