EASY ONE-PAN FAJITAS

INGREDIENTS

  • 1 pound thin sliced chicken breast

  • 3 bell peppers, thinly sliced

  • 1 yellow or white onion (optional)

  • 2 Tbsp Fajita Seasoning (or salt, pepper, garlic powder, onion powder and cumin)

  • 2 Tbsp Chili-Lime Seasoning (I get it from trader joes!)

DIRECTIONS

  1. Preheat oven to 400

  2. Spray your baking sheet or pan down with pam or olive oil

  3. Add your chicken to one side and your peppers & onion to the other, doing your best to keep it one even layer.

  4. Sprinkle on your seasoning generously and evenly

  5. Bake at 400 for 22 to 25 minuets until chicken is cooked through and pepper are tender.

For meal prep, I serve mine with black beans (drained and rinsed, not cooked. Add seasoning to them in the container), brown rice or cauliflower rice, and some salsa!
