This amazing and easy salsa recipes is courtesy of one of my great friends, Dani! Very few ingredients but tastes straight from a restaurant! It’s super fresh and easy to doctor up to any flavor and any consistency you like!
1 can mild Rotel (diced tomatoes and green chilies)
1 can regular Rotel
1 /2 yellow onion
handful of fresh cilantro
1 lime-salt and pepper
Chop onion and tear cilantro off its stem, add all ingredients except the lime, salt and pepper to a blender or food processor and blend until desired consistency, I went for a smoother salsa this time!
Once blended add salt and pepper to taste, squeeze in the juice of one lime and stir.
You can serve immediately but I prefer it after an hour in the fridge!
