Once again, I breezed over about 5 recipes for a stuffed pepper soup and decided to do my own thing, my favorite! This is DELICIOUS y’all! And a nice change from the typical chili or vegetable soup! Filled with great ingredients and a filling low calorie meal, you cant go wrong!


  • 1lb ground beef (any ground protein will work)

  • 2 cups COOKED brown rice

  • 4 cups beef broth

  • 2 cups chopped bell peppers (I used frozen but fresh it awesome!)

  • 1 can diced tomatoes

  • 1 can crushed tomatoes

  • 1/2 yellow onion, diced

  • 2 Tbsp Italian Seasoning

  • 2 Tbsp Trader Joe’s 21 Seasoning Salute (or just extra Italian seasoning!)

  • 1 Tbsp Minced garlic

  • Garlic Powder, Salt & Pepper to taste


  1. Start by browning your ground beef in a skillet on medium heat, add in your onion and let it cook up with the meat. Season with garlic powder, salt and pepper.

  2. Once beef is cooked, drain fat if necessary and add in minced garlic, diced tomatoes, crushed tomatoes, bell pepper and beef broth. Season with 21 seasoning salute or Italian seasoning, parsley, salt and pepper to taste.

  3. Bring to a boil then reduce heat to low, cover and let it simmer for at least 20 minutes.

  4. Cook brown rice separately (I used the organic frozen brown rice from Trader Joes!) and once its cooked stir it into the soup! Serve with sour dough if you’re feeling fancy! *Serving size is about 1.5 cups, I just divide mine evenly into 4 containers!*

Per Serving: 293 calories
