You really can't go wrong with these foil packet dinners! Pick a protein, add some veggies, top with your favorite seasoning and bake! There are so many variations of this recipe that you can make, the possibilities are endless! For this dish we used Italian seasoning as the star and seasoned up our potatoes, squash and chicken for a savory and simple weeknight dinner!
Thin Sliced Chicken Breast
Zucchini, squash, or any veggie you like! (Green beans or broccoli would be great, too!)
Olive Oil, salt & pepper to taste
Preheat oven to 425 degrees F.
Dice up all veggies into bite sized pieces then throw them in a bowl all together
Season your vegetables with olive oil, Italian seasoning, salt pepper, or get creative with your favorite seasoning blends!
Add your seasoning veggies to the center of a foil sheet about 18" long
Season your thin sliced chicken breast on both sides and lay it on top of the veggies
Fold up the foil around the veggies and chicken until its tightly sealed and there are no gaps.
Repeat until all of your chicken breast & veggies are gone, ours make 6 foil packets with 6 red potatoes, 2 zucchini & 1 squash.
Place on a baking sheet and bake at 425F for 35-45 minutes until potatoes are soft and chicken is cooked through.
Yields 6 servings at 490 cals each.
