RAMEN BOWLS

Yields 5 servings at 498 calories

This is a random recipe I just threw together one week for lunches and its definitely a keeper! While its higher in smart points its a great recipe and wiggle room to make it your own!


INGREDIENTS


  • 3 Packages of Ramen (This is a lot of noodles, I think 2 packages would be great!)

  • 1 lb diced chicken breast

  • 2 Zucchini¬†

  • 1 package Baby Bella mushrooms

  • 6 Tbsp Kikoman Stirfry Sauce

  • 5 Tbsp(ish) Low Sodium Soy Sauce

  • **Feel free to use your favorite veggies, a frozen stir-fry blend is great!!**


DIRECTIONS


  • Add 6 cups water to a large pot and bring to a boil

  • Slice your vegetables into bite size pieces and cook on medium heat for 10-12 minutes or until tender

  • Season with salt, pepper, garlic powder, and seasoning salt (optional)

  • Set aside vegetables and cook your chicken in the same pan, adding the same seasonings

  • Add your ramen noodles to the water and once they are tender (2 minutes!!) drain them and add them to a pot with the cooked vegetables and chicken

  • Add in stir fry sauce and soy sauce to taste.¬†
