CROCK POT BURRITO BOWLS

Yields 5 servings at 215 calories.

What this recipe lacks in photogenic tendencies it makes up for in taste! So easy and super filling lunch or dinner recipe! I love all things burrito bowls because you can add whatever you love with some taco seasoning and call it a meal!


INGREDIENTS

  • 3 chicken breasts

  • 1 jar salsa

  • 1 packet taco seasoning

  • 2 Tbsp or 1 packet ranch seasoning powder

  • 1 to 2 bags of frozen cauliflower rice (I like the medley with carrots and peas)

  • 1 can black beans

  • 1 can or bag of corn is optional, I’m not a corn fan!

  • Green Chilies would be awesome in this as well!


DIRECTIONS

  1. Start by cooking your chicken in the crock pot with the entire jar of salsa, 1 packet taco seasoning, and ranch powder

  2. Cook on high for 2 hours or until chicken shreds easily

  3. While shredding your chicken cook your cauliflower rice in the microwave and drain and rinse your beans

  4. Add everything to the crock pot with the shredded chicken and season with salt, pepper, and garlic powder OR fajita seasoning if you have it!

  5. Mix until well combined!

  6. Top with sour cream, salsa, taco bell sauce, whatever you like!
