By now I think everyone has recreated the KFC bowls (if not, you should!) but this Cajun twist is a favorite for my Louisianan boyfriend! we add blackened chicken and a brown gravy by Tony Chachere's and call it a day! Easy, simple, a little spicy and always a hit! Talk about comfort food!
INGREDIENTS
Mashed potatoes (homemade or pre-made, no judgement here!)
1 can Sweet Whole Kernel Corn
Brown Gravy Mix (we use the Tony Chachere's brand to keep with the Cajun theme but McCormick has a brown gravy mix packet you can buy!)
Diced Chicken Breast (or tenders)
Blackened Seasoning
Cheese is optional
DIRECTIONS
Preheat oven to 425
Season your chicken generously with blackened seasoning and bake in the oven at 425 for 20-25 minutes until cook through. We used the tender and diced them after cooking.
While the chicken is cooking, put the corn in a pot on low so it can heat up.
Prepare your mashed potatoes according to package instructions (or home make them if you're fancy!)
Prepare your gravy as the topping to your bowl
Once all of your ingredients are ready, you can assemble your bowl!
We always layer mashed potatoes, then add corn, top with the diced chicken and finish it with a drizzle of brown gravy!
