A fresh, light, Italian-inspired quinoa recipe perfect for dinner or lunch prep.
1 cup quinoa
2 cups water
2 zucchini. sliced
1 can diced tomatoes (Fire roasted is awesome!)
1/2 cup chopped fresh basil
2 Tbsp Sun Dried Tomatoes
Minced garlic, Italian Seasoning, salt & pepper to taste -**I added 1 cup mozzarella at the end but it wasn’t necessary and I will skip it next time!**
Start by cooking your quinoa and while its simmering dice your zucchini and any other vegetable you’re adding.
Heat up some olive oil in a large skillet at sauté the zucchini until its getting tender.
Add in diced tomatoes, sun dried tomatoes, garlic and Italian seasoning (plus salt and pepper!) and stir until well combined.
Let simmer until your quinoa is done, once its done add it into the zucchini mixture along with the fresh basil and stir until well combined.
Serve with chicken and a side salad for the perfect dinner or meal prep!
