SIMPLE TACO PIE

Yields 6 servings at 273 calories each

INGREDIENTS

1lb ground turkey 

1/2 cup chopped green bell pepper

1/2 cup chopped onion

1/2 cup light sour cream

1 cup fat free cottage cheese

1 packet taco seasoning

1/2 cup taco sauce

Crushed Tortilla Chips (I used 2 servings of Tostitos, 14 chips total)

1 cup shredded cheese

Salsa for topping (or layering if you’re fancy)

*Use fat free cheese if you want to lower the points!*

DIRECTIONS

Preheat oven to 350. Brown ground turkey and cook onion and bell pepper down together on medium heat. Once meat is fully cooked add in your taco seasoning and taco sauce and mix well. In a seperate bowl combine sour cream and cottage cheese, mix well. In a greased baking dish add first layer of crushed tortilla chips (I left mine kind of big, not down into crumbs). Follow by adding a layer of meat (about 1/3 of the mixture). Followed by a layer of the sour cream mix and more tortilla chips. Make your top layer the meat mixture and top with the last of the crushed chips and a cup of cheese. Cover with foil and bake at 350 for 30 minutes then remove foil for an additional 5 minutes. Cut in 6 servings.
