This Tex-Mex style burrito bowl is great when you need a filling dinner with very little points! We’re replacing rice with zucchini and its amazing! Add whatever you love in a typical burrito bowl and enjoy!
INGREDIENTS
•ground turkey (or ground beef, ground chicken, shredded chicken, Tyson tenders, whatever!!)
•taco seasoning
•black beans
•zucchini, mushroom, tomato, any vegetable you like! (I have added cabbage too to bulk it up!)
•salsa
•Toppings like lettuce, taco sauce and sour cream!
DIRECTIONS
1. Cook your meat then add in the taco seasoning and story.
2. Add your vegetables (I use zucchini and mushroom!), beans, and some salt and pepper and let it cook down and get tender.
3. Add some salsa to help combine everything together and you can also had seasoning like garlic powder, cumin, onion powder, or chili powder!
4. Top with shredded lettuce and tomato and serve with light sour cream, salsa, queso or Taco Bell sauce!
