Spinach & Canadian Bacon Egg Cups!

These egg cups come to 100 calories a piece, have 10 grams of protein and are SO delicious! I add a little hot sauce to mine and its perfection for an easy weekly meal prep! You can add anything you like to them and switch them up every time for a new flavor on an easy recipe! I also added some leftover roasted potatoes from a dinner and it was so delicious!


  • 12 Eggs

  • 12 Sliced Canadian Bacon, diced

  • 2 Cups Fresh Spinach, chopped

  • Roasted Potatoes (Optional)

  • Seasoning to taste


  1. Preheat oven to 350 F.

  2. Chop Canadian bacon, spinach and any other add-ins.

  3. Whisk up 12 eggs and season well, I love this Cavenders Seasoning

  4. Spray muffin tin and evenly distribute toppings between the 12 muffins

  5. Fill the rest of the muffin tin with the egg mixture

  6. Bake at 350 for 15 to 20 minutes, until eggs are firm ( mine took right at 18 minutes!)

Yields 12 Egg Cups at 101 calories and 10g protein each!

These look yummy !! How long will they keep and could they be stored in freezer if I wanted to meal prep ?
