Quick and easy stir fry to whip up for a simple meal prep or a filling weeknight meal!
1lbs or 3 large chicken breast
3 medium zucchini
2 cups sliced baby Bella mushrooms
diced onion & minced garlic to taste
1/3 cup Low Sodium soy sauce
1/3 cup coconut aminos (mine is on the sweet side, you can sub for 1 Tbsp honey)
2 Tbsp Garlic powder
2 Tbsp Onion Powder
1 Tbsp Corn Starch (to thicken the sauce)
Salt & Pepper to taste
