Yields 11 cookies at 236 calories each.
4 small extra ripe bananas (about 285 grams)
2 cups quick oats
1/2 cup Almond Butter or any nut butter of choice
4 Tbsp mini chocolate chips
2 Tbsp Monkfruit Sweetener or any sugar option
Mash bananas completely with a fork then add in your oats and combine.
Next add in your almond butter, sugar, and mini chocolate chips and mix until all ingredients are well incorporated.
Line a baking sheet with parchment paper and start forming your cookies, mine made 11 large cookies.
Bake at 350 degrees for 15 minutes until cookies are set.
I prefer mine warmed up in the microwave for about 15 minutes each day for breakfast!
