Yields 11 cookies at 236 calories each.


  • 4 small extra ripe bananas (about 285 grams)

  • 2 cups quick oats

  • 1/2 cup Almond Butter or any nut butter of choice

  • 4 Tbsp mini chocolate chips

  • 2 Tbsp Monkfruit Sweetener or any sugar option


  1. Mash bananas completely with a fork then add in your oats and combine.

  2. Next add in your almond butter, sugar, and mini chocolate chips and mix until all ingredients are well incorporated.

  3. Line a baking sheet with parchment paper and start forming your cookies, mine made 11 large cookies.

  4. Bake at 350 degrees for 15 minutes until cookies are set.

I prefer mine warmed up in the microwave for about 15 minutes each day for breakfast!
