These no bake pumpkin energy bites are perfect for a grab and go breakfast, an afternoon snack or a delicious sweet dessert! At 113 calories a piece these pack a big punch and cure any sweet tooth! I love making fun twists on recipes for different seasons and these pumpkin energy bites are perfect for any fall day and they come together in minutes! All you need is 5 ingredients, a bowl and a spatula!
INGREDIENTS
1 1/2 cup Old Fashioned Oats
1/2 cup Nut Butter (I used peanut butter)
1/2 cup Canned Pumpkin
1/4 cup Maple Syrup
1/4 cup Mini Chocolate Chips
Optional: 1tsp Pumpkin Pie Spice or cinnamon
DIRECTIONS
Combine all ingredients in a bowl and mix until completely combined
Line a baking sheet with wax paper
Use a spoon or ice cream scoop to scoop mixture onto sheet creating balls about 1 to 1.5"
Place cookie sheet in freezer for 30 minutes to firm them enough to handle
Roll each bite into a ball and store in an air tight container in the fridge or freezer
Yields 14 pumpkin bites at 113 calories each!
