PUMPKIN OAT MUFFINS



These oat muffins are so easy and I created them with ingredients I already had on hand! You can get creative with this recipe and make it your own, add nuts or a chocolate drizzle, yum!

INGREDIENTS

  • 1/2 cup 100% pumpkin puree

  • 1/2 cup yogurt (I used Fage plain but a vanilla would be good too!)

  • 2 eggs

  • 1 cup oat flour (or blend a cup of old fashioned oats like I did!)

  • 1/2 cup all purpose flour (can sub more oat flour or almond flour)

  • 1/4 cup granulated sugar (I used coconut sugar)

  • 1/3 cup chocolate chips

  • 1 tsp baking powder

  • 1tsp pumpkin pie spice (sub with cinnamon if you don't have this)

  • Pinch of salt


DIRECTIONS

  1. Preheat oven to 350F

  2. Add wet ingredients to a bowl and combine well (eggs, yogurt, pumpkin)

  3. Blend your oats if necessary and add in all remaining ingredients to the wet mixture and stir until well combined.

  4. Add into a greased or lined muffin pan - mine made a batch of 10.

  5. Bake for 15-18 minutes at 350F until completely cooked through

  6. Enjoy!

Yields 10 muffins at 160 cals each (6g protein!)
