I am not even sure this qualifies as a recipe but man is it gooood! You can really throw in any veggies, sauce and protein you have on hand and call it pasta but this combo is definitely a go-to of mine when I want something easy and comforting!
1 Box pasta of choice (I like the banza chickpea pasta!)
1lb Mild (or spicy!) Italian Sausage
1 bag fresh spinach
1 Jar of your favorite sauce or a few cups of homemade marinara
1/2 cup Shredded Parmesan
1 Tbsp Minced Garlic
Salt & pepper to taste
Start by getting a pot of water boiling on the stove for the pasta, cook according to package instructions, and heat up some oil in a separate, large skillet.
Add your sausage or protein into the skillet, season with salt, pepper and garlic and cook completely.
Once the sausage is cooked through add in your sauce and let it simmer for 5 to 10 minutes.
When the pasta is done, drain and add it into the sauce along with fresh spinach and shredded Parmesan.
Stir until well combine and spinach is wilted.
Serve warm and enjoy!
