ZUCCHINI LASAGNA BOWL

Yields 4 bowls at 298 calories each.

Probably one of my greatest creations to date! So simple and delicious, and its easy to make for just one person or a whole family! Add anything you love like spinach or green bell pepper and make this dish your own!


INGREDIENTS


•2 to 3 Zucchini – sliced into half moon shape

•1 lb 99% ground turkey (or other ground protein of choice!)

•8oz Baby Bella mushrooms- sliced

•Zero point marinara (try my recipe here) or your favorite pasta sauce

 •Low fat ricotta (for one bowl I use around 1/3 cup)

•Grated Parmesan cheese (1 Tbsp per bowl)

DIRECTIONS

  1. Cook zucchini and mushroom on the stove until tender, I add a little olive oik to mine and season with salt, pepper and Italian seasoning!

  2. Add in your sauce and let it simmer for 5-8 minutes.

  3. When serving just grab your bowl and layer your zucchini mixture with ricotta and you’re done!

  4. Top with grated Parmesan or other cheese if you want!
